Mr. Meds' Hip Check Pork Chops Recipe

What you need:

Pork Chops (Bone in preferably buy boneless will work too.)
  • Canola Oil
  • Apple Juice
  • Cider Vinegar

Spice Rub Ingredients:
  • Brown Sugar
  • White Sugar
  • Kosher Salt
  • Cracked Black Pepper
  • Paprika
  • Cayenne Chili Powder
  • New Mexican Chili Powder
  • Red Chili Flakes
  • Garlic Powder
  • Onion Powder
  • Cumin
  • Coriander
  • Oregano
  • Dry Mustard
  • Ginger
  • Crushed Dried Rosemary
  • and a couple secret ingredients..
Best part of a spice rub is they are totally experimentally to taste.

What to do:            
  • Rub Canola Oil lightly on both sides of Pork Chops
  • Apply spice rub liberally to both sides
  • Place Chops on pan and cover with plastic wrap let refrigerate overnight.
  • Hour before grilling remove chops from fridge and uncover
  • Heat Grill to High or over 400
  • Sear each side of chop for 2 min each side
  • Lower heat(gas grill) to medium or move to indirect heat(REAL GRILL)
  • Baste Chop with a simple mixture of Apple Juice and Cider Vinegar
  • Cook until internal temp reaches 140
  • Pull from grill and let chops rest for 15 minutes, this will continue to cook the
    chops without moisture loss.
  • ENJOY!
